Paigu is a cut on the bone that has a genorous amount of meat. At home, we love steaming it with black bean sauce (as you can see in the second photo)! It's a well-known Chinese dish – you may know or recognise it at Yumcha.
We recommend chopping it into bite sizes and marinating it the night before to let it chill in the fridge overnight to let the flavour absorb into the meat. If you want a more delicate flavour, then you can skip the overnight part! It won't disappoint!
