Haven't tried pork fillet before? It's a tender and lean cut, a great alternative to chicken breast! We like to describe its texture and taste as an in-between of chicken and steak.
In the photos above, we used a spice rub (paprika, garlic, salt and pepper), then grilled it on the pan before finishing it off in the oven. The pork absorbs the spice and gives it great flavour!
